Drake squeezes back, then lets go so Sharkface can grab the pot. ]

[ Once the pot's on to boil, Drake puts a little oil in the pan and starts cooking the veggies, explaining the order as he goes. Onions first, always. Then carrots and peppers, broccoli and snap peas. Then the chicken to brown a little before anything else. ]

[ Sharkface sticks close, watching as Drake works. He marks the sequence, the way that Drake mixes everything. How it's stirred, how the various pieces react to the heat. He nods, stepping forward. ]
Yeah. You know what the raw chicken feels like... [ he passes the spatula ] This is just barely seared, so it's undercooked. Feel how it's a little firmer and then squishes? That's how you know it's still raw inside.
[ He holds up a hand to show a trick he learned on tv that actually works. He touches the tip of his index finger to his thumb, then pokes the meaty bit just beneath. ]
Raw. [ middle finger to thumb ] Rare, or undercooked for chicken. [ ring finger to thumb ] Cooked through. [ pinky to thumb ] Overcooked.
[ While Sharkface keeps the stir fry moving, he grabs the noodles and checks if the water's boiling... it is, so he tosses them in and then goes to add the sauce to the chicken and veggies so it can thicken up. ]
So that starch I added is going to thicken it up as it cooks. You want to keep an eye on it... it'll get glossy instead of cloudy like it is right now, and it'll stick to the food. That's what we're looking for.
Not sweet-sticky, it'll just start to coat things instead of running back off into the bottom of the pan. I'll show you.
[ He scoots over a little so Sharkface can get as close as he needs to see... he finds he's enjoying this on a teaching level as much as he likes the moment. Peaceful and domestic and perfect for what it is. ]
